Mouth-Watering Vegetarian Chilli Bowl

This is a go-to quick and easy recipe in my household. I always seem to conveniently have these ingredients lying around in my cupboard to throw into the pan and onto my plate.
This is such a versatile recipe, as you can swap out different vegetables or even just add loads more in!
Feel free to add in mince or meat alternatives too.
Ingredients :
Olive oil
Chopped garlic
Chopped onions
Peppers, carrots, sweetcorn (the more colours the better!)
Chopped tomatoes
Red kidney beans
Chilli con carne spice mix
Vegetable stock cube
Tomato paste
Balsamic vinegar
Toppings
Fresh green chillies
Plum tomatoes
Avocado
Feta cheese
1) Heat the olive oil in a pan and fry the garlic, onions and the chopped vegetables until the onions are golden brown and the veggies are a bit softer (If you prefer you veg a bit crunchier, add them with the red kidney beans later).
2) Add the chopped tomatoes, stock and spice mix.
3) Bring to the boil and then simmer for 8-10 minutes.
4) Add in the red kidney beans and simmer until the beans are cooked through.
Serve with rice and top with avocado and fresh tomatoes!
